Recipe for Chocolate Chess (aka Cracked Earth Pie)

Unbaked pie shell
2 eggs, beaten
3/4 cup brown sugar (light or dark, or both)
1 tsp vanilla
1/2 cup butter (1 stick)
2 squares Baker’s Semi-Sweet Chocolate
Toasted Nuts of your choosing & Red Chile Powder

Preheat oven to 325. Melt butter and chocolate in pyrex measuring cup or other safe vessel in microwave (or use double boiler). Do not overheat, just barely melt. I use a large fork, but you can use a whisk or electric beater: Beat together the brown sugar, eggs and vanilla in a small bowl. Add melted chocolate & butter mixture and beat ’til almost double in volume. Pour into pie shell and bake for 30 mins. Will puff while baking and crack while cooling. This is a thin pie, a small pie pan is best. Because it tastes like an undercooked brownie, I add 1/2 cup toasted nuts and a TBSP. red chile powder to cut the sweetness. But only PURE red ground chile powder, not the kind w/spices like garlic, cumin, etc. Mild chile powder will just leave a trace of warmth after each bite. Outrageously decadent and delicious!
